Tanker Beer
when empty, the outlet cellar tanks are cleaned and for the best quality pre-pressurised with CO2 gas prior to delivery. Tanker drivers use air pressure to gently push the beer from the tanker into the cellar tank. The beer from the tanker must then be kept cold and pressurised with the right amount of CO2. Tank beer has a recommended shelf life of seven days as tanks are never sterile and they do have air in the headspace contributing to oxidisation.

Keg Beer
Keg Beer is sterile filtered and is of better quality than tank beer. An unopened keg has a shelf life of 90 days. However once connected to the beer system a turnover time of four days for icebank (warm) kegs and seven days for coolroom kegs is recommended.

Packaged Beer
Most of DB's packaged beer is pasteurised but some is micro filtered to give a fresh taste. Packaged beer has a shelf life of 120 days but freshest is always best. Fro best quality packaged beer is best stored under cool conditions. Also it is best kept away from light to avoid the development of a “skunky” aroma.

Cleanliness
• Beer systems should be cleaned regularly (weekly is best).
• Glassware should be clean to ensure the beer foam is stable and able to form.
• Avoid greasy food as it will destroy the head on the beer.
• DB Breweries tests and recommends detergents for glasswashers and manual cleaning of glasses.

To test if a glass is clean, fill it to overflowing with water and then invert - if water forms a continuous sheet inside and out then it is clean (Spotting indicates grease).

Temperature
If the beer is too cold it will appear to be flat due to lack of head. If it is too warm it will lose CO2 and will taste flat. A serving temperature of 2 to 3 degrees Celsius is recommended for most of DB Beers.
