I don't think that's too great a concern...we are talking about "far better and far cheaper", after all...."Far better" meaning nothing at any price exists to compare with Foveon. Don't forget, this Foveon is said to be better than film...one needs to consider the "enlarging" implications of that...

Arguably, nature is truly DIGITAL, not analog; it just depends on where one looks. ie "analog" current is composed of discrete electrons, light is a collection of individual photons, etc.

Your argument is interesting from an academic point of view, but not very relevant to the world of engineering. The term "digital" has very specific implications for electrical engineering, which are far removed from quantum mechanics.

Digital and discrete are not interchangeable. Digital is discrete in time and with the simplest subset of discrete values. What is a discrete electron? In position it has a continuous probability distribution. In energy it has a vast number of discrete states, but only when confined. In any case, it is better to depict nature as being quantized, but not digital, in its smallest facets.
