Dan, you have ignored a basic rule of science that says that to accurately reproduce a signal, you need a recording medium that is at least 10 times as accurate as the signal itself. Lens testing is usually done with microfilm (or an equivalent) which is capable of extraordinary resolutions -- while color snapshot film is designed for low cost and reasonable color accuracy.

If you research the Kodak web site you will discover nuances such as rms granularity and how silver halide grains can be developed to yield variable sizes and shapes that improve effective sharpness ... much like HP Laserjets use variable dot sizes to smooth curves and improve grayscales. It took me many years to understand these issues and to perfect the techniques that I have used in professional darkrooms. It is a very complex science that can be counterintuitive at times. I hope that you (and others) do your own research and enjoy the experience.

As to what Foveon and NSM can do, I know not. Nor does anyone else it seems. If AltaVista and HotBot searches are worth anything, Foveon technology is a myth.
