TW, I'm not sure what they use at Keeneland, but it is terrific. Some of the locals have told me that folks used to put squirrel, etc. into the mix. (Maybe they were pulling my leg.) Don't think I'll ever make it to W. KY unless they move the track there. <g> I favor BBQ pork and was a regular at Billy's BBQ in Lexington. Haven't found any good BBQ in CT, and I've forgotten a place in Memphis that a friend used to get by airfreight. If you know of any mail order operations that are good, I'd love to know about them.
