I'm trying to figure out which meats get the most tender when bbq'd.

Not grilled mind you, but really bbq'd (5-8 hour over indirect heat).

I did some whole chickens this weekend, outside reminded me of shrunken heads, but the insides were totally moist and juicy. (sorry bout that TLC).

I also did some boneless ribs but they were tough...good flavor though.

Ideas? No crows or things like that either guys.

P.S. The oysters sound good!

I don't know about oysters but down here in Mississippi you can get great possum on the half shell...armi..armi...armidillo.
