Collard greens are good. Saute chopped onion in a little olive oil. Put the chopped collards in the same pot and toss them until they are covered with oil and a little wilted. Add a couple of cups of water and some hot pepper flakes and boil. Then you have the pot liquer too.

I have never had poke salad, but I think I would like it. Maybe I am part black. It wouldn't surprise me in the least.

I remember once when I worked in a doctor's office in New Orleans, one of the nurses, who was black, used to remark that her skin was lighter than mine. Which was true. She stayed out of the sun and I didn't.
