I have only had venison when it was a bit stringy and running "high". I like strong tastes, so it didn't bother me, but it is not altogether charming...Interestingly, the principle of farming to taste works in some instances, but fails miserably in others. For example, farm bred catfish are better, but farm bred oysters are terrible, hardly worth eating. Goose is better from a farm, but quail seems to be better as game...In some instances, it is difficult to recreate or improve upon the environment in which things grow. Seawater is complex, and oysters from different areas take on the peculiarities of the place they grew...
