Pink is the traditional color for pickled eggs. I don't know why. But we stick with tradition around here. If it was good enough for my grandmother, it's good enough for me. The color is natural, it comes from beet juice.

Edit: might be a Pennsylvania "Dutch" tradition - my grandmother's father was Pennsylvania "Dutch."

I've seen pink pickled pigs lips and pink pickled pig feet before, but I don' t think we serve those here. Not absolutely sure that the pickled pig feet were pink, but definitely the pickled pig lips. Never ate pickled pig lips nor a pickled pig foot - - it must be something like chitterlings, you have to be introduced to it young. Don't care for fried pork rinds, either.
