Your decision to try vegetarianism for Lent is really admirable!

I eat meat, but I cook for my vegetarian teenage daughter. Here are some ideas:

You can freeze blocks of firm tofu, then defrost and squeeze the water out. The result is a dense, crumbly mixture that's a great substitute for meat. You can use it in tacos, veggie burgers, and any casserole that calls for ground meat. You won't be able to tell the difference.

Black bean soup and rice, or any combination of beans and rice is a complete protein. If you like spicy food, look for Mexican recipes.

Baked potatoes are a great base for building a veggie dinner. Stuff them with melted cheese, steamed vegetables..

If you find your self really missing meat, buy a frozen cheese pizza and the vegetarian pepperoni slices (made of smoked soy).

Buy a bottle of "Beano" tablets for gas. You'll need them over the first week and they work well.
