The yellow tomatoes have a different pH if I recall.....I know it did something to the sauce because I've never been able to really duplicate it in the years that I've cooked....

We never cut the cloves....and I doubt it makes too much of a diff in a tomato sauce....it might..I know that when I use garlic in other dishes I do take off the green...if I see it....seems that more mature garlic shows the green more...and that's the only reason I remove it....

We all have different tastes....I know people that demand 6 varieties of meats in the sauce....but I don't like it that way...

I will add that meat balls......richen the sauce more than ground beef.....and I don't know why....I would think it to be reversed....
