Yeah, I was told that the yellows have a less acidic pH than the reds. And I agree about the cloves: the older, the more likely they'll have the bitter green core.

I know some Italians love pork to be cooked in the sauce. Not my taste, though.

You use dry pasta? Even the Florentines told me to use dried, not fresh, in a tomato sauce.
