We can bore OMD with cooking ideas, LOL! (Some of my favorite recipes are from the Desperation Dinner cookbook!) I just typed out this recipe to pass on to a friend, so I thought I'd post it to you. It is a *dinner idea*, and one that is often requested by my father when he comes over for dinner.
Hamburger/Noodle Casserole - Bake 350 about an hour, uncovered
1 12 oz. package of large noodles, cooked and drained 2 lbs. ground beef 3 onions chopped (I use already chopped frozen onions...one bag) 3 cloves garlic (I use already chopped garlic, stored in refrigerator) 1 green pepper, washed and diced 2 cans stewed tomatoes 1 can whole corn 1 can ripe olives (Pitted) 2 small cans tomato sauce 1 14 oz. can mushrooms or fresh mushrooms sliced 1/2 lb. grated cheddar cheese (more or less) salt/pepper to taste a few dashes of Worcestershire a "glug" of soy sauce..to taste dry sherry to taste
Fry meat. (drain grease). Add onions, green pepper, garlic, salt and pepper, stewed tomatoes, corn, mushrooms, olives. Add soy sauce and worcestershire, and about 1/4-1/2 cup dry sherry.
Cook noodles while you're doing the above frying.
Drain noodles.“Pam” or grease casserole dish. Layer noodles on the bottom of the casserole, then add meat mixture, top with grated cheddar cheese.
This makes a large casserole.....for about 8-10 people. (This can be made into 2-3 smaller smaller casseroles.....and if you do a smaller casserole, then you won't need to bake it for as long a period of time.)
Best when made a day ahead of when you want to serve the casserole, or even made ahead and frozen for a later date. |
