I make all kinds of cheesecakes, e.g., plain, pumpkin, chocolate walnut, banana nut, and so on...

For the plain cheesecake...

3 8 oz. packages of cream cheese

5 eggs

1/2 tsp of vanilla extract

agave nectar to taste...

Use a hand held mixer to mix the eggs...

Put the cream cheese into the microwave for about 1 minute and 30 seconds to get it soft...

mix the cream cheese into the eggs...

Add the vanilla extract and agave to taste, probably between 1/2 to 1 cup, I never measure it...

Mix it all until it's very well blended and creamy...

Stick your finger into the mix and taste it, that's how the finished cheese cake will taste...

Spray a 9 inch round pan with a 1 inch side with canola spray...

Pour the mix into the pan and bake for 40 minutes at 325 degrees...

Remove and let rest for about 10 minutes, then put into the fridge fo at least 6 hours, overnight is better...

Enjoy for breakfast or after breakfast...

For ice cream, just use the exact same recipe for any home made ice cream, just use agave or organic unrefined case sugar to sweeten...
