Kumar, that is an awesome recipe and I'll be trying it as my kids do love curry. Thank you:)

You are right in that the basic recipe is extremely versatile.

Here's a very similar one for Chinese chicken curry that I've done for years (and my mom before me lol!):

- Use chopped chicken thighs (preferably bone-in) as the meat of choice;

- Omit the chopped tomatoes, put raw chicken directly into the cooked spices to quickly brown and use broth to prevent the sticking;

- Turn heat to low and when chicken is cooked, add some chunks of boiled potatoes and use potato water or broth to get desired amount of sauce;

- Garnish with some green peas and chopped green onions.
