In my humble opinion there are two tastes of Sturgeon: BAD and TERRIBLE.

They are a very historic fish. They have no bones.

In between the filet's, they have an orange cartilage, that is fishy in taste to me.

Some smoke them and that was even worse.

I've been told if you boil the steaks in bay leaf and salted water and then grille them , they are good. But I've not had it that way.

I like the caviar from a spoon.

The first time I hesitantly tried it, I put it on a Ritz cracker. I was jokingly told I was ruining the taste of caviar.

Caviar is the nest part of the fish, and my spearing partner tells me I'm eating fish guts.

So depending on who you are, the jury is still out.

I gave my sturgeon to my spearing partner and he grilled it and said it was wonderful BWDIK
