In my opinion "smoked" is the only way to do sturgeon. And also imo it's absolutely delicious. As you mentioned no need to worry about bones. If you tried smoked sturgeon and it wasn't good it probably wasn't prepared correctly and you should try it again from a different source. That saltiness is great with a cold beer. Have fun out there in the city on the ice! There is such a great camaraderie amongst ice fishers. Enjoy
