Hey Jim: Its deer only when on the hoof, otherwise the four legged ungulate becomes Venison when on the platter. Then the ladies think its elegant fare & will like it. However, trout is trout, caribou is caribou, moose is moose, ell is elk...but then again, plain old chicken used to be called "baby pheasant". Wild boar when feeding well in the uplands can be passed off as Veal as they're not fatty like domestic hogs. My favorite bird dish is either roasted ptarmigan or ruffed grouse.
