Why do you have to move back to the mountains to eat better? I am assuming you are speaking shorthand, and that on the coastline, due to the warmer climate, you don't want to eat the kind of things you eat in the cooler mountains?

Not cool here yet but the heat wave broke yesterday. Now if only it would rain.

We like beans in the chili, I know it's not authentic, but it's satisfying. And I know pinto beans are more authentic, but we don't like them.

Sounds like chiles jalapeno and pequin. A fine combination.
When I have the time, I like to roast my own Pasilla, Guahillo,
Serrano, and New Mexico chiles. It is best to evacuate the house
first if you do this indoors. The Guahillo chiles can be very hard
to find, but they have a uniquely rich smoky flavor. There are
many spellings of 'guahillo' that seem to be used interchangeably.
