I'd always thought that centering came from the law of averages, and statistical normal distribution.

If 80% of items are within 2 standard deviations of normal, and you apply a uniform function to these items, they will still be within 80% of normal after the function.

However, when a non uniform function is applied (enviormental stress), then the distribtuion can become skewed.
