Regarding a MacOS-based handheld:

IMHO, the problem with this idea is that the MacOS was designed for a desktop. WinCE is (barely) living proof that scaling a desktop OS down to a handheld form factor is a really dumb idea. And while I have faith that Apple could do a better job of it, I still think it is not the right way to go.

Better to start with an OS designed for the form factor. This causes problems for Apple because now you're talking about a major investment in OS development that would require the recruitment of new developers and go head-to-head with several established competitors. IMO, Apple would be much smarter to strike a deal with Palm or Handspring, start by adding value to the current Palm OS and hardware and, over time, become more of a full-fledged OS development partner. Apple doesn't need to own this market in order to get a big piece of it.
