Lot of Mediterian dishes, soups, rice and bean dishes, risotto's
All with strong flavors with a lot of vegitables.
Also some French dishes that favor the country side...like Pheasant, Quail recipes

Chicken -- fish -- lamb, very little red meat

Any meats I eat must be raised without hormones, growth stimulants, etc. Flavor is much better....you should try them if you haven't?

I was in Jasper and ordered an Alberta filet...first this year.
It was cooked to the bone....black as could be. There I was in prime Alberta beef country and they have a law that requires all beef to be cooked black all the way through...Go Figure?

The US Government just announced that any one living in England for more then 6 months can no longer give blood in the USA. Mad Cow disease you know. Our country invented the process. I've stayed away from these cuts for years.

That's the last red meat I ever order out.

Speaking of food, I've got to put something together.
