My mother usually takes the whole vines and ties some twine around them so that they are in small bunches and hangs them in a place where they are probably kept at around 60 F. They seem to ripen well and have a normal taste.

That's the only way I know. Apart from that, I just like fried green tomatoes, so that's how we use up some of them... or slice them and use them in place of eggplant in recipes where they can stand in for it.
