I believe the labels were used that way for brevity.
You are right that taken as composite or multidigit numbers, every day is even or odd. But the idea here was a day whose date contained strictly even or odd digits.
It appeals to those of us who grub posts or get a little swervy in traffic when a Neat Odometer Pattern shows up. I scared a Volvo on Tuesday, but I had a very good reason - 11111, and I wasn't gonna miss it.
