Long ago, in a school room far, far away ....

We learned that Area = Pi(r*r).

So increasing from 2 to 3 inch wafers increases the area from 4 to 9 (times Pi, of course). 9/4 = 2.25, so each wafer is 2.25 times as big, or 125% more than the 2" wafer, which is what the article says: "A 3-inch wafer yields about 125 percent more LEDs."
