Although I am not familiar with a quantity of applications that would require operating in a 500 deg C environment. (Although, I bet devices that can will be very high margin).

How about in situ analysis of the combustion process in an engine cylinder, jet engine, or gas heater? Perhaps these would allow attaining higher efficiencies.

A huge number of industrial processes run at elevated temperatures, perhaps these can be better optimized with insitu monitors as well.
