I don't bother with the simmering, nor with the wrapping -- seems to work fine if you just have the stuff together and submerged. Or maybe it does work better if you simmer it -- don't know. But I DO know not to use an aluminum pan, or you will have the gunk all over the pan!

And the article still doesn't say why it works.
