I agree that diet soda and the use of tagatose in foods that require heating (if heat doesn't break down the compound) is ultimately the big market. But sugar free toothpaste and medicine is also a considerable market because of the SMALL amount of tagatose required. The small amount means that the manufacturer can probably make the sugar free product at a cost that is competitive with sugared items. Sugar fee TUMS, for example. That may appear small, but it is really huge. To paraphrase a famous Illinois Senator, a dollar here, a dollar there, pretty soon it adds up to real money.
