Cajun-style would make almost anything taste good. But you make my point about duck, you have to really doctor it up to make the thing palatable.

I would also probably enjoy duck if I were drunk.

That ruins it. Oil, flour plus the trinity of peppers, celery and onions. Add cayenne, pepper and green onions. Brown. Add meat and cook 'till soup. Salt to taste.

I saw a show where a guy was cooking malla docks. When he showed greenwing teal I figured out he was cooking MALLARD DUCKS.

Now the fat guy had a good program and did some great stuff as did the Breakfast At Brannigons. Too much Cajun cooking is just brown flour, grease and the trinity.
