Duck cooked right is beyond palatable, it's just ducky. Very few meats have just enough fat that they can be cooked simply - steak, roast beef, hamburger, roast chicken, what else? Everything else either needs fat added, or liquid, like fish needs to be oiled before grilling or else poached, or slow cooking, or some other way of coaxing out its goodness.
