I know all about Waldorf and Montessori. I agree with some of what they have to offer. When I home taught my oldest I used some of their methods. I swallow nothing whole, however.

No is sometimes perfectly acceptable. As in No Frederick, I do NOT agree with you. No is a very useful little word. No created no fear in me- does it create fear in you? Are you afraid of the no word Frederick?

Cmon. I read a book that said, "If provided ample choice and variety children will chose a balanced diet."

That is pure crap and the people that wrote that book were paid to spout that nonsense. But I guess people manage to get paid for uttering all kinds of tripe. Sure, some kids will "choose wisely". Many, if not most, won't. I actually tried their advice to see - sure enough - it won't work. And it is terrible for some kids. Some impulses to gorge oneself are driven by the former rarity of high-calorie foods in nature. Boy, if you found a bunch of high calorie stuff to eat, dig in. Nature rewarded you. The basic biology of early hominids is completely out of whack with modern availability of food in first world countries. These biological impulses are now at odds with good health.
