If we admit (and you have) that many of God's motives are unknown and perhaps incomprehensible to us, why should we believe that truth is one? Or benevelance?

That is a good question. In my analysis I found the only one who didn't have a hidden agenda (hidden from me, anyhow) was ME. So a philosophy that had me at the center seemed to avoid a lot of the intentional deceptions that seemed to manifest in organized religions. Sure I can be self-deceived or deluded, but it can't be an active process unless I'm really ill mentally.

Monday may be gone but the things we do, the kindness, the Love, the sin's committed and the wrongs we have done, remain. They must and will be accounted for. The soul is made in the image of God and is therefore personal. It's qualities would include Reason, will, emotion, and moral responsibility before a Just and Holy God. You will also be reunited with your present body and that body will go with you into your eternal destiny. So far from being a "non-sensical question" it is the most important question any man can ask. How do we atone for sin?

The apocryphal books were not considered to be Scripture by the Jewish people who's writings they are, and they were not added to the Catholic bible until after the reformation. These writings were also not accepted by the majority of the early church. The fact that your friend was not aware of that is not surprising, few people are. Inspiration of Scripture is discovered, not bestowed by the Church. It is inspired on account of it being "God breathed".
