Farmland is usually protected from development by zoning laws rather than subsidies. I think precisely because you cant make a buck farming * it is attractive to sell for developments rather than keep it as a producing asset.
Remember that there is also a lot of farmland in the USA that will probably never be developed anyway. Without the subsidies it would just sit idle or as grassland.

*(ok that is a very general statement but in light of the size and recurrence of the past subsidies, i think it is mostly true)

I am not an expert though and dont claim to be one. Common sense only says that you cant run a business with never ending losses or cant produce below cost for an extended period of time.
