I never make poached eggs because they fall apart - will try the vinegar method - I do know that using absolutely fresh eggs helps a lot. I usually make softboiled eggs, and burn my fingers when I try to scoop out the egg and if I am alone I say bad words, which seems to make the burn feel better. -g- Do you know a way to scoop out the egg without burning your fingers?

Of course you can't use poached eggs for Eggs Benedict - can you?

Perhaps now is a good time for me to add some value here since beano has been brought into the subject.

As we age the amount of Hydrocloric acid in our stomach is not sufficient to break down all foods.

YOu can purchase HCL as Betaine at any health food store.
If you are the type who has chronic reminders of dinner long after eating, you most likely have an HCL deficiency.

A friend of mine was buying alka seltzer buy the gross for years. Last Thanksgiving we were over for dinner and he mentioned how much alka seltzer he would need to calm his stomach after all the food he was about to eat. I gave him one tablet before dinner and it was the 1st time in a decade that he did not need to take alka seltzer after a meal. He's about 40 years old. This is about the time acid production begins to slow.
