I think you would agree that money is what drives this economy and it's acquisition is what motivates people to own and operate any business. Human errors are always factors in any endeavor. When the human errors can have a consequence that may cost people their lives then it is necessary to impose some sort of guidelines. All this does it keep everything a bit more honest.

Many business operators do not have degrees in bacteriology. I doubt too many meat packers and butchers have taken bacteriology courses and microbiology courses.I doubt they know what Enterobactericae are and are not familiar with infective doses of Shigella versus Salmonella.
Listeria monocytogenes and E.coli are other bacteria that can cause harsh effects when ingested by someone who is in a compromised immunological condition.

I sure as heck wouldn't want to lose a family member cause
some delicatessen didn't want to lose money on some luncheon meat so they sold it instead of throwing it out......you lose your life to put a couple bucks in someone's pocket.

My father-in-law ( rest his soul ) had a ravioli factory many years ago. One of his workers lost his finger in the meat mixture! Well, he didn't want to throw out the batch and lose that money so he processed it and made sure that batch was delivered to an out of town customer! I hope he didn't spark some underlying cannibalistic tendencies in anyone. Doubt he was the only one that did something like that.......he was creative but didn't hold a monopoly on wanting to keep as much money as he could.
