Most of the Montezuma's revenge is caused by E.coli bacteria. There are many strains of E.coli and not all cause illness.

I heard of a couple getting a Montezuma's revenge like illness from a protozoan called Giardia that they traced back to their hotel swimming pool. ( One of the pair was a microbiologist ).

Oh yeah, while I'm on Alaska, I completely forgot about a local delicacy called stink eggs. Take some bird eggs, wrap them in dried grass and bury them in the ground for three weeks. Dig them up and eat with relish. Also works with seal meat and several other high protein foods.

No, I haven't tried it and don't plan to. Every once in a while the newspaper reports natives getting sick from eating them. That's because they switched to Tupperware. Ventilation is vital to the success of this recipe. I suppose this is some form of <<Montezuma's revenge >>

Montezuma's Revenge results from more than just fresh fruits and vegetables. I NEVER ate those down there and still got sick. We (my wife and I) finally stopped it. We bring granola bars and canned foods that don't need cooking (like sausages) with us. We get pizza, lasagna, etc. down there - things that have been cooked well enough to kill bacteria and viruses. Since we started this regimen, the intestinal problems have stopped.

Baja California is pretty safe these days. That's because electricity and refrigeration are common.
