Raymond,

>>Was that tidbit about farmers substituting wheat for corn and beans from the WSJ article or was that your conjecture?<<

That was my conjecture ... and Perhaps a bad one...! Being in Boston. <smile>

Big thing around here is Organic. Fastest Growing Food Markets are those who sell organic fruits, vegetables, and meats. All the old economy food stores are all putting in Natural Food sections to get a piece of the pie. This is true in all the major cities of the east coast and even up-country in Vermont and NH.
I hate to say this Raymond, but organic farming is here to stay.

>>If farmers decide to back off from beans or Starcrossed Corn, they'll put in a legume crop for the nitrogen fixing and silage. They won't put in wheat.<<

Again your closer to the fields..!
Anyway, if I were farming, I'd be an organic farmer "In Like Flynn" on the latest food wave.

Being a history buff on China's food cycles and such, did you ever read any of Arnold Toynbee's "Study of History"...?
You'd like it. Seems the same thing that happened to China will happen to us someday. <smile>

That was a great piece on China.

Thanks for your thoughts,

Chip
