On soy milk, I experimented with a lot of brands and finally settled on Westsoy Organic Unsweetened. There's no question that it takes a few days to get used to a slightly different taste in your coffee. Don't keep it opened any longer than a week, as it will go bad after it's been opened, just as regular milk will. Perhaps that was the problem with the soy milk your brother had?

Just try the soy milk gradually...first in your morning coffee, then perhaps in soups, then as a "sauce" in a rice dish, and so on.

Whole Foods has just come out with their own brand of soy milk. It is in the refrigerator section and does have a fresher taste than the Westsoy "shelf" brand. They seem to be bringing it out slowly, so it's not always available, but I do intend to buy it whenever I can find it.

Soy is a heavily-pesticided crop, so it's important to buy organic soy products where possible.

Soy is such an excellent health food, particularly because of its amazing ability to lower cholesterol, that it's worth taking some time to try to introduce it into your diet.

Cascadian Farms has some excellent frozen dinners that are vegetarian, and Amy's Organic foods are also a favorite of my husband- he is a vegetarian. We also eat boca burgers and garden burgers- all the flavors are excellent- we especially like the Greek flavor Gardenburgers. We enjoy the soy chicken nuggets and corn dogs you can find at the supermarket. We haven't yet found a fake hot dog we are happy with, outside of a corn dog, nor have I found fake breakfast patties that are acceptable. I can highly recommend the vegetarian soups by Prgoresso- they have a tuscan bean and a ministrone that are real winners.

We love the spinach and cheese ravioli you can buy at Costco. And we eat a lot of cheese tortolini. We also like portobello mushroom ravioli- but perhaps your dislike of mushrooms extend to the Portobello? You can buy a frozen cheese pizza and deck it out with veggies (Tombstone stuffed crust or oven rising are our favorites).

Apologies if any of this is repetition. I don't have a lot of time to cook- so I am into TIME saving vegetarian stuff.
