How about some cake to go along with your fish? <g>

Fresh Apple Cake

1 1/4 cup Cooking Oil (vegetable oil only)
2 teaspoons vanilla
2 eggs
2 teaspoons cinnamon
2 cups sugar
1 1/2 teaspoon baking soda
1 teaspoon salt
3 cups flour (all purpose flour)
*6 apples, peeled, cored and chopped

Mix together all of the above except the apples, dough will become stiff. Stir in apples. Put in a greased and floured bunt pan, cook on 350 degrees for 1 1/2 hours. Let pan cool, then invert pan onto plate. I don't like to top the cake but if you want you can make a simple glaze and drizzle it on or you can sift powdered sugar over the top.

* I use Granny Smith apples. We hold their shape, don't get all mushy when baking, also, they're tart and juicy. You can use any type apple you like.

Trim off the belly meat, that thin piece has a lot of the fat in it and also the PCBs. Leave the skin on the filet, oil the skin and put the filet skin side down on aluminum foil. Sprinkle some paprika on the filet and cook in a covered grill. Wet wood chips add a nice smoky flavor. When the filet is white all the way through, it's done.

Salmon are also good for a boil. Put an open kettle of water over an open fire. Add your veggies and boil. After about 1/2 hour add chunks of salmon. The oil will leave the salmon and rise to the top causing a boil over and a flaring of the fire when all works right. It's done then.
