Have you tried Japanese bread crumbs (PANKO)? They are wonderful! The chefs on the cooking channel rave about them. They are made by a special process somehow. They appear almost as flakes and are very crispy... good on anything!

I get them at a gourmet food store.

I tend to mix nacho cheese flavored dorito's with the crackers. Dress it up with some cajun seasoning and your ready for the best fried bluegill this side of the Mississippi!
