Civiche is fish "cooked" only in a type of lemon juice. Really doubt the rubbery aspect but buy into the fact that the flesh is cooking. Perhaps I just compensate by cutting down the cooking time. Also, I put the juice on just prior to startting the cooking process.

Well, that makes sense because in Belize, they use lemon and lime juice to *cook* their seafood, I can't spell worth a flip but it's called civeche. The only other place I've had that was at Churrasco's in Houston.

For some reason, it just didn't taste the same........

Pickled Herring is a wonderful example of "acid cooked" fish. I love Pickled Herring in sour cream. M
