The difference in taste might be due to the citric juice. Appears to be impossible to find the same type of small green lemons in the states. They are not limes. Closest thing is Mexican limes. But then again it varies greatly from cook to cook even in the same country. In Peru one would use lots of Cilantro, raw onion and a Peruvian hot pepper.

You know your post reminded me of pickled salmon up in Alaska. They take whatever Salmon they have left over from the grill and put it in a jar in the refrigerator. The jar has some concoction of vinegar in it and it pickles the salmon. It really is quite good and holds forever. M
