I was reading a study today comparing the incidence of rheumatoid arthritis amoung Greeks living in the US and in Greece - genetically pretty much identical, diet very different. One thing I didn't know, and maybe you didn't either, is that for traditional Greek Orthodox members, there is more than one Lent period - 6 weeks at Christmas time, liberal; 7 wks at Easter, strict; 2 weeks Dormition of the Virgin, strict; Wednesday and Friday weekly, strict. Some of the time, it's ok to eat fish and olive oil, during the strict period some people don't eat any fat at all.

The people who ate a lot of cooked vegetables and olive oil had less than half the number of cases of rheumatoid arthritis as the ones who only ate a little.

Which has nothing to do with being vegetarian - but giving up meat for Lent is something that is practiced world wide and has been for hundreds of years - and may well have health benefits.
