<<<<<<This is NOT my experience at all... that was the 70's IMO. Most I know [lots] are very careful about eating mostly vegetables, and varying their diet big time to boot.>>>>

Well I agree that vegetarians and simi-vegetarians have started to eat a more balanced diet, including more vegetables, and occasional meat/fish and cutting back on the the grains and pasta. I suppose it does matter who you know, because I know some well intentioned vegetarians who simply become too lazy to vary their diet and rely on rice and pasta to make up the bulk of their calories. I really do not think these people are doing themselves any kind of favor, but what do I know. It seems our knowledge in this area is severely polar and lacks any vary good long time studies.

My main gripe is against processed grains, pasta, bread and sugar as empty calories. I really believe this is more harmful than good. At the same time I do not think eating hamburger 3 times a day can be good for you either. I am not sure of a good answer, really, and tend to waiver back and forth on what I consider a proper diet, especially the protein portion of a diet. Nuts? Berries? Fish? Eggs? I do think that fat is overrated as dietary evil, in fact I think it provides a sense of fullness to ones meal and may stave off hunger and decrease binge snacking and carbo laden eating fits. Fat is definitely a better energy source as it burns slower and more evenly. Before my knee operation, I noticed as I cut back on processed sugar and grains and ate more fatty foods, my endurance and energy level during exercise was greatly increased, fwiw....
