I have been to Glenwood Springs! My daughter had a roommate at CU from there, and we stopped enroute to Aspen one time. It is charming.

Fantastic... and so were the Boudin sausages I made last night with my new sausage maker... about 8 lb of 'em.

These are delicious but are REALLY sloppy to make. I am going to have to find a better way to make ones like those... first I ground the chicken breast meat with pork sausage (yeah, I cheated) and with vidalia onions, bread soaked in hot cream and chicken fat.

Next, I added the 8 beaten eggs with some stock and smooshed (IT'S A VALID WORD... you will find it under S in your culinary dictionary) everything together and of course every thing was seasoned with salt, quatre epices and additional white pepper.

Next, I went back to the grinder and put in the stuffing tube... and put the casing on it. Then worked all 8 pounds of that puppy into casings... as a couple would come off, I put them in boiling stock. Learned a lesson there - DO NOT BOIL! Some of them popped...

Cooked each batch a half hour and put in fridge and cleaned up (took over half an hour and STILL had a sink full of things to be cleaned up.

Both my wife and I thought they were fantastic... I plan to smoke about half of them... on applewood tomorrow.
