First, there are all kinds of reasons that microcosms do not reflect overall demographics, having nothing to do with racism. You are just putting a particularly obnoxious spin on it. Jews are over- represented in the professions, probably because of the cultural tradition of achieving prestige through learning. They are underrepresented in sports. Is that discrimination?

Blacks are over- represented in basketball, because it seems that inner city blacks have made it "their game". There is speculation that it resembles a West African game, or that it is because it requires a minimum of equipment. Whatever the reason, they are usually the stars in that game, while they are underrepresented in hockey. Is that discrimination?

Currently, blacks are over- represented among PH.D. candidates in sociology and social work. Of course, that may change, but it so happens that they are woefully under- represented among PH.D. candidates in the hard sciences. Therefore, someone recruiting blacks for the government bureaucracy would be a lot more successful than someone recruiting blacks for laboratory research. Is that discrimination?

Sorry, but one cannot make an inference about discrimination solely based on statistical representation.

You seem quite ignorant on this subject. My father was in the restaurant/bar business for years as was my wife. We have many friends and acquaintances in the business. In my experience -

My waiter is rarely Mexican unless I am in a Mexican restaurant or some other restaurant in a Mexican neighborhood.

There is a lot more to being a good waiter than just showing up for work. In this state "tipped employees" are paid less than $3 an hour. If you don't know the drill and have some good people skills, your next stop is the drive-thru window at a fast food place.

Many people like the flexibility of working hours and social aspects of the work.

There is can be serious money in serving food and drink. I live in a resort area and there is great competition for better jobs. It is not unknown to pay for a job.

Plenty of food and beverage people around here own their own homes and homes ain't cheap around here.

Also, due to high turnover, seasonal flux, etc. there are plenty of opportunities to "move up" in the restaurant business. The number one reason many don't move up is because they make a lot more as a server. And, don't forget most people who own restaurants started out working in one.
