When RQ starts up, press the CTRL key, which pauses the loading and lets you select a permanent server. I think that'll stop the unwanted switching. (You'll have to experiment a bit to find out which servers work best for you.)

I'm using RealTick.com, I just checked, requesting a full day's chart with 1 minute bars for any stock takes 2 seconds. Requesting 10 days of 1 minute bars takes 12 seconds. My ping to beacon.taltrade.com is about 240ms, so not that great. Would be a lot better if I was using a provider with a UUnet backbone.

It doesn't seem like charting software that would switch servers while trading and take so long to do it should really be acceptable. Also, you are either requesting too much data, or something's wrong with your download speed. I've heard quote.com is not very reliable, but I doubt it's really that bad for everyone.
