Perhaps it's because the Jewish race has a facility, earned over history, of being successful traders and business people that the Palestinian "elite" feel that have to beat or betray? I use the inverted commas because they are not being elite imho. The highly ironic thing is the Palestinians, particularly if we're speaking of the Palestinian diaspora, have these skills also -- they're the new Jews of the Middle East. But the Palestinian leadership, with the backing of the rest of the Arab world, are deeply invested in the Arab/Muslim ethos, which says that any land that was once Arab and Muslim cannot become non-Arab and non-Muslim. It is not permissible to make final settlements with unbelievers, only cease-fires. Countries are respected on the basis of the hayba, the awe that they project. If that's the ethos you are dealing with, then compromise is only seen as weakness.

Just a point- There's no such thing as a Jewish Race. Judaism is a religion. Think of it in terms of the Catholics, or the Methodists. There's no such thing as the Catholic race, or the Methodist race.

Perhaps it's because the Jewish race has a facility, earned over history, of being successful traders and business people... You may not be fully aware of the fact that the so-called "facility" you note was not exactly voluntarily acquired. Jews were fobidden throughout Europe in the Middle Ages from owning property or conducting business in common trades. Shylock is a stereotype conjured by Shakespeare of the Jew who was trapped into the occupation of "trader-lender" by centuries of discrimination.
