Another attention-grabber is pulling back a huge bet (on a VERY favorable count) when the dealer decides to shuffle. I got booted from the Gold Coast after a couple of those moves.

Vegas dealers today can count right along with the player. You won't get a job as a single deck dealer without mastering that ability. Of course, when the deck becomes rich in high value cards, the dealer just shuffles. In this way, you're actually at a disadvantage playing a single deck. I've seen it happen on double deck tables too.
