They don't burrow like a clam does. They lay on top of old shell beds.

I don't think they have heard of oyster stew in Louisiana. All the cooking shows I've seen from there are the same. You hate some oil, add flour and brown it to make a roux. Then you add the trinity, onions, celery and bell pepper that's a must. Then you add green onions, garlic, cayene pepper and any other spices you want. Maybe some slimy okra. If it's a fish dish you add fish and fish stock. Same with beef and chicken and crawdads and oysters.
