I hope it was ham in thin strips, or cooked well.

I would not eat pork prepared by anyone other than myself. The risk is only 1% if they did not cook it to 160 degrees internally for 15 minutes but it is a risk that is more than I would ordinarily take. I would not be crossing streets if one out of a hundred times I would certainly get shmucked. (Salting for 48 hours works, or smoking.)

Then again, I have not eaten beef for about 8 years now. (or drank alcohol) It appears I was right about beef.

If I could afford to eat only organically grown foods, that were prepared by a conscientious and knowledgeable outfit. For some reason our food growers do not seem to think there is much demand. How the demand is supposed to get to them, I am not sure I know. I think they have to supply it to test the theory.

That pork and papaya dish sounds good. I don't like sweet dishes either so I'll accept your recommendation.

the mango is still my fruit though

In exchange, one of my favorite dishes for your consideration, a curry. You saute a bunch of carrots and onions. Add curry powder, raisins, cashews, mango pickle, and cooked chicken and serve as any curry.

I'm sure you don't want to turn this into a cooking thread, so I'll desist now. <g>
